An end grain butcher block, built by hand in my shop in Val-d'Or, Quebec. It's a cutting board, not a countertop: you set it on your counter and work on it. One of a kind: the block in the photos is the one you get.

Specs

  • 23 x 12 x 1.4 inches
  • 3.56 kg (7.8 lb)
  • No juice groove and no feet: both sides are flat
  • Oil and wax finish

The wood

A checkerboard of maple, walnut, mahogany and cherry. Every square is a small block glued standing up, one at a time. It takes a long time to build, and it gives a pattern you won't see anywhere else. The logo is engraved in one corner.

Why end grain

In an end grain block, the wood fibres stand upright. Your knife blade slides between the fibres instead of cutting through them. Your edge lasts longer, and the block shows fewer marks than a regular board. That's why butchers work on these.

Shipping

Care

Wash it by hand with warm water and mild soap, then dry it right away. Never in the dishwasher. It ships already oiled and waxed. Rub in some food-grade mineral oil from time to time. It feeds the wood and keeps it from cracking. Do it more often at first, then a few times a year.

What it's for

Cutting, chopping, slicing. It also makes a great serving board for charcuterie or cheese, and plenty of people just leave it out on the counter because it looks good.

Frequently asked questions
